Mar-a-Lago Turkey Burger

The Recipe

I saw this on Oprah the other day and it kind of goes with this weeks burger theme. No... I don't watch the show on a regular basis although Mom calls me everyday when she comes on and tells me to watch it. Yes... TELLS me to watch it.

Oprah writes..."Oprah found a new favorite food when she tried this turkey burger at Mar-a-Lago, Donald Trump's private club in Palm Beach. "I believe [it] may be the best turkey burger in the entire world," she says. The Mar-a-Lago Turkey Burger will be permanently available at the Trump Bar and Grille in Trump Tower in New York City, open to the public for lunch and dinner. It will also be served during lunch in Chicago at Sixteen, the Trump International Hotel restaurant."

Mar-a-Lago Turkey Burger

1/4 cup scallions, thinly sliced
1/2 cup celery, finely chopped
3 Granny Smith apples, peeled and diced
1/8 cup canola oil
4 pounds ground turkey breast
2 Tbsp. salt
1 Tbsp. black pepper
2 tsp. chipotle Tabasco™
1 lemon, juice and grated zest
1/2 bunch parsley, finely chopped
1/4 cup Major Grey's Chutney, pureed

Sauté the scallions, celery and apples in the canola oil until tender. Let cool.

Place the ground turkey in a large mixing bowl. Add sautéed items and the remaining ingredients. Shape into eight 8-ounce burgers. Refrigerate for 2 hours.

Season the turkey burgers with salt and pepper. Place on a preheated, lightly oiled grill. Grill each side for 7 minutes until meat is thoroughly cooked. Let sit for 5 minutes.

Serve with a side of Mar-a-Lago Pear Chutney and your favorite toasted bread, pita or hamburger roll.

Mar-a-Lago Pear Chutney

1 Anjou pear, peeled and diced
1/2 tsp. cinnamon
1 tsp. sea salt
1 1/2 cups Major Grey's Chutney
1/4 cup dried currants or raisins

Preheat oven to 350°.

Toss the diced pears with the cinnamon and salt. Bake on a parchment-lined cookie sheet for 10 minutes.

Cool and mix with the chutney and currants or raisins.

Hi, friends! Do you remember when Ziggy Cat and your ol' pal R. Pup were in the park when a big fuzzy gray animal with a HUGE long nose came out of the bushes? We were kind of scared until the new animal asked us, "GOT ANTS??"

You guessed it, Mighty Minds...It's an ANTEATER! He said, "Yes, I'm an anteater...I come from South America, and my name is Tom An-doo-ah (Tamandua)."

Tom told us that he was coming north because his natural home was being messed up--all dug up, trees wrecked, water no good--this is called habitat destruction (hab-i-tat dis-truck-shun). (Tell your teacher you heard about this--you will be the SUPER KID in your class!) Tom told us he was travelling by train--with help from Boxcar Pete, such a nice guy!

Ziggy Cat--always first with the best--sprinkled crumbs from our cake on the picnic blanket...PRESTO!!! HERE COME THE ANTS!!!...Marching single file like a little army...and HERE COMES TOM THE ANTEATER!!!...Snuffing up all the ants with his long nose...Haven't seen such great action since the time I accidentally pushed the button on the vacuum cleaner!! THE PICNIC MESSER-UPPERS ARE HISTORY (that means all gone)!! But Tom had to be going...His pal Boxcar Pete gave him a pass to ride the "Bug World Bus"...Kind of like a trip to heaven for an anteater. See you next Monday!

American Idol

I think last night American Idol started off really silly. They're singers. Not fighters. It's just my opinion, but I was embarressed for them guys. Hi Kieto, Just read your Seymore von Tickle and I thought it was good. But your squirrel one got me laughing out loud. I had something like this happen to me. Was on my way to a class and came to a stop sign and my neighbors black cat had been asleep in the back seat and jumped up on the back of my neck. Talk about jumping! Didn't have time to go back so called my husband to go tell the neighbors I had their cat. Of course he said what are you doing with her ??? Duh! Glad you worked out the prob. for the wedding. My best to you Mom and Ziggy! Susie

Regarding the Cranberry Burgers with Balsamic Sauce Recipe

Well now.....this recipe is verrrrrrly interesting. hmmm. make us some squirrel. was it a little bitty 'red' squirrel? jb

Nah. It was a rat with a furry tail. I haven't seen any around my house for awhile. hmmm. Dropping him off at the park may have been a good thing after all. Maybe they're there looking for him. There's plenty to do there anyway. HA!

This recipe sounds great! I think I'll try it w/ground turkey....Turkey and Cranberries! Perfect.... Hope you're on the mend!! Sarah

A couple of things... I couldn't figure out the moral so that's why I didn't respond. I was still working on it! LOL I think maybe my brain takes time off every once in a while. I'll try these cranberry burgers. funny that you should use cranberries in a recipe today. I made a cranberry-apple pie yesterday. Guess our prayers were answered re. your voice. God found a way! Cranberry Burgers with Balsamic Sauce

Hi ya! I hope you had a great weekend. If you remember, I had a wedding I had to sing at. By the way, thanks for your thoughts and prayers. Saturday, after tossing and turning all night cause I was really worried about not being able to sing, I tested my voice and yes, I still had Laryngitis. I called a friend and we got someone to fill in for me. I still played the piano. I just didn't sing. It worked out fine.
I left my window in the car open Saturday night. Sunday morning on the way to church as I was driving along Skinker Blvd. and Forest Park, I looked in my rear view mirror and saw a squirrel inside sitting be my back window. Anyway, it scared the **** out of me. hehehe. I pulled over and opened my back door on the passenger side and went around the car to the other side and opened that door to scare it out. It ran out and up an oak tree. I went by the tree, looked up and started scolding the squirrel for living in my attic for the last year. I continued to tell it that I hope he stays in the park and never comes back. I told it that next time, if it did come back, I would drive him someplace I couldn't find my way back to.

About this time, a jogger was jogging past me and gave me this look like I was nuts. When I tried to tell him about the squirrel, he just picked up speed. He was too far away from me to explain and I didn't feel like shouting because I had Laryngitis. So, I just got back in my car and drove off to go to church. But not before giving my a couple toots goodbye to both the squirrel and the jogger.

The Recipe

Here's another super recipe for burgers. Especially if you like cranberries. Let's do it!

Cranberry Burgers with Balsamic Sauce

1/2 cup dried sweetened cranberries
1/2 cup hot water
1 cup white onion, finely chopped
1 tsp garlic powder
2 pounds ground chuck
1 tsp freshly cracked pepper
1 tbsp butter
1 tbsp plus 1 tsp fresh rosemary, chopped
1/2 cup chicken broth or stock
1/3 cup canned, whole berry cranberry sauce
1 tbsp balsamic vinegar
1/4 cup mayonnaise
6 slices thinly sliced red onion
6 firm, hamburger buns, preferably sourdough

Soak dried cranberries in a small bowl with hot water for 10 minutes to soften them.
Drain and coarsely chop berries.

Mix 1/2 cup of chopped white onion, presoaked cranberries, garlic powder, ground chuck, and pepper in a large mixing bowl until incorporated, but with a light hand to avoid compressing meat too much.

Divide mixture into six equal portions and form patties and set aside. Prepare a medium hot fire in a charcoal grill with a cover or preheat a gas grill to medium high.
In heavy medium skillet over medium high heat, melt butter until bubbling. Add remaining chopped white onion and 1 tbsp of rosemary and saute until onion softens, about 3 minutes.

Add chicken broth, cranberry sauce and balsamic vinegar. Stir until sauce melts, about 2-3 minutes. Turn heat to boil and reduce, stirring occasionally, until sauce has reduced enough to thickly coat spoon, about 6 minutes. Add salt and pepper to taste and set aside.

Mix mayonnaise and remaining 1 tsp of rosemary together in a small bowl and set aside.

Place patties on grill rack and cook, turning just once, about 4 minutes on each side for medium rare.

In last 3 minutes of cooking patties, place hamburger buns, cut side down, on outer edges of rack and toast to desired crispness.

To assemble burgers, spread cut side of buns with rosemary mayonnaise. Place a burger on each bun bottom and spread burger with cranberry balsamic vinegar sauce. Top with slice of red onion and cover with bun top.

Notes: We love to make these burgers when we go camping in the fall, even the reduction sauce is very easy and all ingredients pack well. I make my meat mixture ahead of time, and pack in baggies.

Well, today we are back at Picnic Park with a great new lunch..."Kieto's Spicy Ottoman Kabobs", and we have put charcoal in the grill by the picnic table. Ziggy Cat is throwing the Frisbee--it goes farther and farther, and R. Pup runs faster and faster...when suddenly the frisbee hits something real long...it goes round and round, round and round...IT'S ON A REAL LONG NOSE!...and the long nose is on something big, gray and fuzzy...COMING OUT OF THE BUSHES...COMING CLOSER AND CLOSER...AAACK!!!

Waving to us with his long claws, the long-nose monster says, "Guys, I'm starving! Don't worry, I would never eat you, and I can't eat those great-looking beef sirloin kabobs on the grill... GOT ANTS?? That's my kind of food..." We'll see you on Wednesday with more of the story--Bet you can tell what kind of animal just walked out of the bushes...

Seymore Von Tickle: Mr. Shortcut



Hi ya! Before we get into todays wacky story I wrote, I am getting sort of worried about tomorrows wedding I am supposed to sing at. Although I am better than I was Wednesday and still have this day, I am not 100%. Say a prayer, will ya? Thanks.

As I said, I wrote this during my Jury Duty. Hope ya like it.

Seymore Von Tickle: Mr. Shortcut

It was just about time for Judge Harry Hooblehoot to announce the fate of Seymore Von Tickle. All of a sudden, the courtroom shook vigorously for what seemed a very long time. While everyone else jumped up and ran for cover to get under tables in the courtroom, Seymore Von Tickle saw his chance for escape. He knew the outcome of his trial was not going to be a good one.

He ran out the door, down the hall, down the stairs to the first floor and out the front door to the street. He looked left. He looked right. He then ran straight ahead out into the street and got hit by a Bi-State Bus. He flipped up in the air across the street into the path of an oncoming Anheuser-Busch Beer Truck. He was sprawled unconscience onto the street. A crowd gathered.

"Someone call an ambulance!" someone shouted.

Several days later, he woke up in the hospital. There was several doctors and nurses consulting and he was on all kinds of machines to keep him alive.

He heard the voices and opened his eyes. Everyone in the room cheered. He asked, "Where am I?"

A doctor replied, "You're in a hospital. You were hit by a bus and a Budweiser beer truck. Do you know who you are?"

"No I don't! But who cares?" Seymore exclaimed. "I'm gonna be a bazillianaire! I'll sue the bus company and the beer company too!! WOO HOO!"

Because he could not remember his name, he went by the name of John Doe.

As weeks and then months passed and his lawsuit to sue was coming up soon, Seymore saw nothing but dollar signs. He bought tons of things on credit. He even took a vacation in Cleveland, Ohio!

It was the day of the trial. He dressed in a $3000.00 Armani Suit and drove to the courthouse in a $50,000.00 Mercedes Benz. Both of which he bought on credit. He told everyone he was gonna be a bazillianaire.

He sat motionless in the courtroom waiting for the Judge. But the whole time he sat there, he sat with a crafty grin staring at the Defendants.

Seymore didn't know it because he supposedly had no memory. But here he was in the same courthouse, the same courtroom in front of the same judge he was at before the accident.

However, things really weren't as they seemed. Seymore thought he was sly enough to pull the wool over everyones eyes and get away with his bamboozle and rake in a bunch of dough! He knew exactly what he was doing and where he was at. Because he was so good at it, he just played dumb and as always, played the victim.

"ALL RISE!" the courtroom baliff anounced. "Your honor, this is the case of John Doe. A name the Plantiff is using because he has not been able to recollect his name after an accident involving Bi-State Bus Company Bus and Anheuser-Busch Beer Truck who are the defendants. This is case #33456 on the docket your Honor. Please be seated. Judge Harry Hooblehoot presiding. You may be seated."

"Seymore Von Tickle!" the judge, looking over his bifocal glasses and down at Seymore said. "I see you are back in my courtroom suing Bi-State Bus Company and the Anheuser-Busch Beer Company for $100 Million Dollars under the name of John Doe."

"Yes your Honor." Seymore replied. "Why did you call me Seymore? You know me? After I was hit by the bus and beer truck, I lost my memory. I have what you call amnesia."

"WELL!" the judge snapped back. "I CAN tell you who you are. You are Seymore Von Tickle and last time you were in my courtroom, I was about to pass sentence on you when we were hit by a 6.0 earthquake. You ran out of the courthouse and crossed into the middle of the street. That's when and how you got hit!"

Looking quite befuddled and bewildered, Seymore said, "You're Honor, I don't remember. I have no idea what you are talking about! Remember, I was hit...."

The Judge interupted, "I KNOW WHY YOU ARE HERE AND WHAT YOU ARE TRYING TO DO!! Now, the last time you were here, it was for jaywalking. You never cross at the corner. It's always in the middle of the block which is very dangerous. You had 453 unpaid jaywalking tickets. And I was going to sentence you to 1 year in jail and a $1000.00 fine. Now, I am throwing THIS case out in favor of the Defendants and am increasing your sentence to 2 years in jail and giving you a $2000.00 fine!"

"But your Honor, I throw myself on the mercy of the court. I always had a reason to Jaywalk!" Seymore pleaded.

"And what was that?" the Judge Harry asked.

"To get to the other side!" Seymore answered.

"Make that 3 years and a $3000 fine. Now get Mr. Shortcut out of my courtroom!" the Judge demanded.

As the sheriffs were escorting Seymore out of the courtroom, he shouted out at the Judge, "I THOUGHT YOU SAID MY NAME WAS SEYMORE VON TICKLE!! WHO IS MR. SHORTCUT?!!"

Moral: You know what it is. Don't you?

Spicy Ottoman Kabobs

Hi ya! Mom says hi to all and hopes everyone had a great day Sunday. I am still a little under the weather with a sore throat now and have a wedding to sing Saturday. I'm worried about it.

The Recipe
OMG! This sounds soooo delishhhh! Chunks of beef sirloin are marinated in a mixture of olive oil & red wine vinegar, and seasoned with garlic, paprika, & ground red pepper, then grilled. Let's do it!

Spicy Ottoman Kabobs

2 lbs. beef sirloin
4 cloves garlic (chopped)
1 tsp. paprika
1/2 tsp. cayenne pepper
1 tsp cumin (roasted)
1 tsp. coarse salt
1 tsp. fresh ground pepper
1/2 cup red wine vinegar
2/3 cup extra virgin olive oil

Cut beef into 1 1/2-inch cubes. Combine all spices and vinegar in a food processor. Blend. SLOWLY add olive oil with blender running. Place meat in a sealable plastic bag with the marinade; squeeze excess air from bag. Place bag in refrigerator for 4 hours, turning once or twice. After 4 hours, remove meat and place on metal skewers, leaving a little space in between. Grill on medium heat about 12 minutes (allow 3 minutes for each of the four sides.) Remove to aluminum foil and wrap. Allow to cool 3-4 minutes before serving.

Notes: Best if done with 12-inch metal skewers. Serve with Kabob-roasted vegetables, including chunks of sweet peppers, onions, potatoes (white or sweet), summer squash, and mushrooms.

Thanks for liking my poem...I never had a letter from kitties before...Quick!! Someone bring me a box of tissues--STRONG, EXTRA- ABSORBENT TISSUES!! To think that cute little kitties would write to R. Pup--I think I'm gonna cry...(blows nose) HONK!!

Michele and her Peke (fancy dog-better'n me) live in Mexico, MO (Mighty Minds--is this in the USA?) Pretty dog's name is Gizmo (Gizzy)--Gizzy likes to "Chomp and Chew" peanut butter sandwiches. Gizzy...Wait till you eat "Kieto's Ground Turkey Onion Burgers!" The animal shelter in Michele's community has a way to "meet the dog of your dreams"--It's called "Bark in the Park"--hey, that's how I got adopted!

Some people don't get off from work till after six--Hey, we could also have "Bark in the Dark!"

Ground Turkey Onion Burgers

Hi ya! I hope you had a nice two weeks while I was away. Most importantly, I hope you had a nice Mother's Day if you celebrated it. I've been a bit under the weather for the last week but went to church Sunday because we had the Mass with the kids choir. It went very well.

After Mass, I went to Mom's house and cooked dinner for her and my brother. We really had a great time and of course, dinner was great. After that, they wanted to get out and I came home, took some stuff for my cold and cough and snoozed out for a few hours. I'm still a bit shakey and have a little temperature, but I will get better.

This is the last 2 weeks of American Idol if you watch it and we're having a good time trying to figure out who stays and who goes. Hmmm. Syesha's next. Easy one.

The Recipe

It was kind of cold, wet and rainy here in St. Louis yesterday and not too many were out doing any grilling. But for the next few weeks, I am going to have some great BBQ recipes for you. Let's start with this one. Ground turkey is mixed with onions, garlic powder, parsley, BBQ sauce, American cheese, tomato and lettuce and served on a bun.

Ground Turkey Onion Burgers

1 whole sweet vidalia onion
1 1/4 lb fresh ground turkey (43% less fat on package)
1 1/2 tsp garlic powder
2 tsp parsley flakes
1 tsp sugar
1 to 1 1/4 tsp salt
2 Tbsp extra virgin olive oil
Hamburger buns
Your favorite barbecue sauce
4 to 5 slices American cheese
Tomato
Lettuce
Pickle (optional)

Peel and chop onions coarsely (1/4 X 1/4 inches.) Heat 2 Tbsp olive oil in skillet on medium heat. Add onions, sugar, a pinch of salt, garlic powder, and black pepper to taste. Stir onions and allow them to sweat then continue cooking until a light brown edge forms on the onions.

Remove pan from stove and set aside. Add garlic powder, parsley flakes, and salt then mix thoroughly together with ground turkey. Add the cooked onions to the ground turkey and mix well.

Form meat into 4 to 5 patties of about 1/4 pound each. Grill just off the heat. Grill about 5 to 6 minutes on each side until clear juices run when lightly pressed with a spatula.

Building your burger: Bun on bottom barbecue sauce to taste turkey patty tomato cheese lettuce (pickles optional) more barbecue sauce bun on top.

Great with french fries, potato chips or any simple side. Like my potato salad. yum!

Well, hi, everyone! I missed you over the last two weeks...Hope you had fun! This is your pal Rescu-Pup...

Would you like to hear about a special parade I went to on Saturday? Of course, we all know what a parade is, but did you know there is a word in Spanish that means the same thing? The word is parada. Hey, let's learn the Spanish word for tater tots... It's los tater tots! This little lesson tells you that...

1. Rescu-Pup likes to learn languages and he likes fast food.
2. Rescu-Pup is silly, but he acts better when he eats Kieto's recipes.

All right, Mighty Minds, choose 1. or 2.--but you may like both answers.

The parade on Saturday was called "The Pooch Parade." You never saw so many dogs, all dressed-up! There was a tiny chihuahua (chee-wa-wa) in a green "Tinkerbell" costume. Another dressed-up dog was a boxer who looked like "The King of Sparkling, Shiny Rainbows"--fanciest outfit you ever saw! Yeah, you want to know what my outfit was... would you believe me if I said I went as a Giant Tater Tot? It's okay if you want to borrow my idea for next Hallowe'en...

Wish your Mom a Happy Mother's Day for me. My Mother's Day will be quiet as my daughter is in Minnesota visiting her boyfriend's mother who is on her 3rd bout with cancer. They don't know if this will be the last Mother's Day to share with her. I'm okay with that- I have my dog Angel who is a character. She is 8 lbs and filled with energy that I wish i was able to have part of it. Hey, she is litter box trained. Great for me, I live on the 2nd floor in an apartment and living in Az the summer days are just to hot to go out --- 115 degrees some days. Nancy

Hi ya! Well, the two weeks off really flew by. I got alot done and Jury Duty was fun as usual. I wrote a new story that I will send out next Friday. It's called "Seymore Von Tickle". I read it to some people I met and Mom and they thought it was funny. We'll see what you think.

Mother's Day is Sunday and I wanted to send out a Special today.
